You know those days when you don’t really feel like really cooking but still want to eat a healthy dish? Well I think pasta with pesto is a great option.
I have homemade pesto at home all the time. You can do more of it and just freeze it. Very simple, very good.
Number of servings: 2
100g walnuts or pine nuts or just add half each ( I like this option the most)
4 tbsp chia oil (or olive oil)
Pinch Himalayan pink salt
1tbsp nutritional yeast
Gluten free pasta or rice noodles
Put all ingredients for pesto into a blender and blitz until you reach a rough texture. Taste and season if necessary with a little more salt or a squeeze of lemon.
Cook your pasta as per packet instructions.
I like to keep the pasta in the cooking pan and add the pesto to give it a good blend.
Serve with some roughly chopped walnuts or pine nuts over the top and a sprinkling of finely grated pecorino.
